Tomato Pesto Feta Salmon
- Pesto (make your own, or Costco brand works well too!)
- Feta Cheese
- Carmello or Roma Tomatoes
Place Salmon on a baking sheet and cover with Pesto. Sprinkle feta cheese over the top. Go crazy or go light, whatever your taste buds prefer. Slice tomatoes then place on top of the cheese. Wala… Bake salmon at 375 for 25 minutes (large piece of salmon may need a bit longer) OR place on the BBQ for 30 minutes.
Side of Green Beens
- Green Beans
- Italian Dressing
- Italian Seasoning
- Salt and Pepper to taste
¼ cup of Italian dressing in the bottom of a skillet, add green beans, sprinkle Italian seasoning, and salt and pepper to your liking. Saute for 10 minutes for al dente green beans.
Side of Rice
- Chicken Broth
Bring 2 cups of chicken broth to a boil, add 1 cup of rice. Reduce heat to low, cover and let simmer for 20 minutes.
